Servings: 4 people and some to freeze (about 20 patties)
Ingredients:
2 potatoes (Quinoa is a great too 1 cup of cooked)
2 carrots
1 onion
3 cloves garlic
1 Tbsp cumin
1 Tbsp coriander
1 tsp salt
¾ cup flour (gluten free or regular)
1 egg or use an egg substitute (1 Tbsp ground Flax and 1 Tbsp water)
Instructions:
Mix veggies in food processor until ground. Then add remaining ingredients until blended. Make into patties. Cook in frying pan or bake on sheet with oil 350F until cooked through and lightly browned don't place too close to elements. Serve with your choice of topping - cilantro, sour cream, salsa, etc.
