Like most celiacs or gluten intolerant people I started out buying all processed foods to meet my bread product cravings and there are a few great products out there. What I've learned is that most of the those great tasting products have corn in them. And a most corn produced in North American is GMO (geneticially modified organism) and that according to this movie http://geneticroulettemovie.com/ it isn't good for us or our gluts! That is why my new cookbook, Easy Gluten-free Lunches and Snacks: Simple Cookbook doesn't use any corn, in the flour mix or otherwise. So recipes are no corn, no soy and definitely no gluten.
