Servings: 4 nice size pancakes
1 cup GF Flour (I use my special mix in Easy Gluten-free Lunches and Snacks: Simple Cookbook)
1/4 cup sugar (feel free to reduce if you like)
1 tsp baking powder
pinch of salt
1/2 cup non-dairy milk ( I use coconut milk)
1/4 cup oil (I use olive oil)
1 Tbsp of ground flax mixed with 3 Tbsp of water
Optional: 1 tsp gluten-free vanilla
1. Mix dry ingredients.
2. Mix wet ingredients.
3. Blend with mixer or food processor the dry/wet ingredients together.
4. Pour on a griddle in a circle. Flip when batter bubbles.
5. Serve with maple syrup, jam or molasses.
